SUSTAINABLE, MINIMAL INTERVENTION

DEFIALY is the work of Micah Hewitt, a winegrower & maker based in the Macedon Ranges, VIC. Passionate about regenerative & sustainable farming and having a hands off, minimal intervention approach in the cellar, the wines are a pure expression of site and season.

In addition to farming his vineyards in the Macedon Ranges he is also sourcing quality fruit from like minded growers in the Central Victorian area and at time beyond there to be able to work with other Italian & French varieties not found closer to home. Some wines are an unconventional blend of varieties, whereas others are pure single site varietal wines but always put together with thought and care for maximum enjoyment.

Inspired by the love his parents had for each other, and their children, Defialy (Don’t Ever Forget, I’ll Always Love You) is named for them.

Micah makes wines that he loves to drink and share with friends, pure vibrant wines that speak of nature, with nothing but stomped grapes inside.

2024 DEFIALY ‘THE FIZZY ONE’ PET NAT – KING VALLEY, VIC

This vibrant Pet Nat bursts with energy and character, reflecting the freshness of the King Valley region. On the nose, expect lively aromas of citrus zest, green apple, and white flowers, complemented by subtle notes of freshly baked bread from its natural fermentation. The palate is crisp and effervescent, offering a medley of tangy lemon, ripe pear, and a touch of tropical fruit, balanced by a gentle minerality. The finish is refreshing and dry, with a playful fizz that invites another sip. Perfect as an aperitif or paired with light salads, seafood, and soft cheeses.

2024 DEFIALY ‘NOT QUITE WHITE’ AMBER - KING VALLEY VIC - NEW

70% King Valley Dolcetto (20% whole bunch) + 30% Zibibbo – both held on skins for 14 days, pressed to tank to settle then into old oak barrels for 5 months, racked back to tank for 1 month. No additions apart from a small amount of sulphur prior to bottling.

Red berries and winegums on the nose, savoury blackberry and cherry tartness, amaro-like light spice, crisp and refreshing acidity. Chill it down & watch it disappear!

2022 DEFIALY ‘UNHOLY WATER’ PIQUETTE

Piquette: a fancy French word for a vinous beverage made by rehydrating pressed unfermented grapes and then fermenting it. They’re usually super low alc (this one is only 5% ABV) and often drunk by the grape pickers in the vineyards on their breaks.

Made in the style of a pet nat, this one has a bit of fizz. It’s kind of like a thirst quenching sour beer but with the structure and fresh acidity of a wine.

2024 DEFIALY ‘OF TIME & PLACE’ - FIANO & GRECO

The 2024 Defialy “Of Time & Place” shows a fragrant Mediterranean lift that’s beautifully expressive. On the nose, expect vibrant citrus blossom and juicy pear from the Fiano, intertwined with herbal dryness and minerality from the Greco. The palate is light-to-medium-bodied, with refreshing acidity supporting layers of lemon-peach fruit, saline grip, and a delicate almond-like nuttiness. Wild-ferment complexity adds texture and tension, ending with a clean, lingering finish.

2022 DEFIALY ‘NOT LOST, JUST WANDERING’ MARSANNE & SB - BARREL FERMENTED

60% MARSANNE (KEILOR VALLEY) HELD ON SKINS FOR 48 HOURS, PRESSED & BLENDED WITH 40% DIRECT PRESSED SAUVIGNON BLANC. BARREL FERMENTED IN OLD OAK ON FULL LEES WITH BATTONAGE THROUGH THE WINTER FOR 8 MONTHS. RACKED TO STAINLESS TO SETTLE FOR 1 MONTH PRIOR TO BOTTLING. NO ADDITIONS.

2024 DEFIALY ‘THE ORANGE ROSE OF THE VALLEY’ ROSE

A blend of 55% Vermentino, 30% Viognier and 15% Syrah that was aged in oak for 8 months. A technically complicated wine that is wholly uncomplicated to drink. Refreshing and vibrant with a slightly nutty oxidative quality, tied neatly together with a touch of salinity. Unfined and unfiltered.

2024 DEFIALY ‘CONTROLLED CHAOS’ GRENACHE

The 2024 Defialy “Controlled Chaos” Grenache is a charmingly expressive and vibrant red. Aromas of ripe raspberry, cherry compote, and gentle Turkish rose petal fill the glass, intertwined with delicate spice and a touch of linseed oil complexity. The palate is luscious yet bright—medium-bodied with juicy red berry flavors, soft cinnamon spice, and a savory herbal thread. Silky tannins round out the mouthfeel, and it finishes with length, finesse, and a subtle earthy persistence.

2023 DEFIALY ‘PALE BLUE EYES’ SAVAGNIN

An intriguing and delicate expression of Savagnin, offering a nose of white flowers, citrus peel, and green apple, with a subtle hint of almond and wet stone minerality. The palate is light yet complex, showcasing zesty lemon, crisp pear, and a whisper of tropical notes like lychee. A lively acidity balances the wine beautifully, leading to a clean, refreshing finish with a touch of salinity. A versatile choice for pairing with shellfish, sushi, or light vegetarian dishes.

2023 DEFIALY ‘OUT HERE ON THE PERIMETER’ PINOT SHIRAZ

80% Macedon Ranges Pinot Noir (20% whole bunch) + 20% Macedon Ranges Syrah (20% whole bunch), aged for 12 months in 15% new francois freres oak + 85% seasoned french oak. one month in stainless with a small amount of sulphur added prior to bottling.

2022 DEFIALY ‘HEART OF STONE’ SYRAH

“100% Macedon Ranges Syrah (20% whole bunch), aged for 12 months in seasoned french oak. One month in stainless prior to bottling. Different vineyard to last year. Beautifully expressive of it’s terrior. Mix of blue to dark fruits, suppleness, white pepper & spice.”

2024 DEFIALY PINOT NOUVEAU - MACEDON VIC - LIMITED

A vibrant and youthful Pinot Noir with a playful and fruit-forward character. The nose is filled with fresh red berries like strawberry and raspberry, accompanied by hints of cherry blossom and a touch of earthy spice. On the palate, it’s light-bodied and juicy, offering bright flavors of cranberry, pomegranate, and a subtle herbal undertone. Soft tannins and refreshing acidity lead to a crisp, clean finish. Enjoy slightly chilled for a lively pairing with charcuterie, grilled vegetables, or casual gatherings.

2022 DOMAINE DEFIALY ‘WILLOW RUN’ RED BLEND - HEATHCOTE VIC

The 2022 “Willow Run” is a beautifully harmonious red blend from Heathcote, offering fragrant aromas of black cherry, cassis, and scorched earth. The palate is medium-bodied, showcasing ripe plum and dark berry flavors balanced by graphite and gentle spice. Silky tannins and fresh acidity give structure and lift, while a touch of herbal complexity adds intrigue. The finish is long and savoury, with lingering notes of baking spice and fine tannin grip—classically Heathcote in both power and finesse.

2022 DOMAINE DEFIALY ‘WILLOW RUN’ CABERNET - HEATHCOTE VIC

A beautifully balanced Cabernet with depth and elegance, showcasing the Heathcote region’s distinctive character. The nose offers aromas of blackcurrant, ripe plum, and dried herbs, with subtle hints of cedar and dark chocolate. On the palate, layers of cassis, blackberry, and a touch of black cherry are framed by fine-grained tannins and a savory spice undertone. Medium-bodied with refreshing acidity, it finishes with a smooth and lingering aftertaste. Perfect alongside roasted meats, hearty casseroles, or aged cheddar.

2023 DOMAINE DEFIALY ‘CANDLEBARK HILL’ PINOT NOIR - MACEDON VIC

The 2023 “Candlebark Hill” Pinot Noir emanates elegance and clarity. On the nose, it offers bright red cherry, pomegranate, and a delicate floral waft of cherry blossom, alongside subtle forest floor. Silky and poised on the palate, it showcases crisp cranberry and wild strawberry, wrapped in fine-grained tannins and a touch of baking spice. A whisper of earthiness and fresh acidity keeps it lively and graceful, finishing with admirable length and precision, perfectly capturing cooler-climate finesse.
